Cacao and Mint Smoothie Bowl

And just like that, 2018 arrived.

In the words of every magazine cover and every human on Facebook’s timeline at the moment: New Year, New Me. Well, not really. Let me be the first to say that I quite like the ‘old’ me, I think she goes alright.

Except, she doesn’t eat breakfast – pretty much ever. And while she knows that’s a really, really bad thing (come on, we all know it’s a really really bad thing), she just can’t help it. But, not one to take things lying down, I have decided that this change in date should be no different, and I will not go quietly into 2018! Not when it comes to eating breakfast, at least.

So how about a resolution? Not one of those impossible, annoying, guilt-ridden-when-they-don’t-happen, it’s-MY-year resolutions though. Rather, one of the completely possible, small steps kind.

Yep, 2018 me is going to be ‘old’ me’s spirit animal – and she’s going to eat breakfast, at least once a day.

I am in no way holier than thou when it comes to nutrition – half the recipes on this blog are testament to that. I pretty much exist on meat, wine and chocolate. Who has time to think about vitamins, nutrients, calories and 5’s and 2’s? If it can go into my mouth quickly and easily and give me some semblance of energy, then that’s something. But I will admit that the results aren’t fantastic. I end up sluggish, hungry ALL the time and quite frankly, feel like I am rotting alive at my desk during the work day.

But apparently, a fog-free day starts with breakfast, and given that this is a new thing for me, this recipe is probably the babiest of steps I could have taken to to get started on implementing this important meal into my daily routine.

This smoothie bowl is simple. I’m talking about five minutes of prep work, six ingredients, and zero cooking simple. Plus maybe another five minutes to make it Insta-worthy (because you can’t make a beautiful smoothie bowl and not post a photo).

In addition to its simplicity, it’s a surefire way to easily pack a bunch of nutrients into a meal, leaving you feeling balanced, clear-headed, energised and ready to tackle all of life’s problems head on.

Plus, it tastes like chocolate trip ice cream – super creamy, and packed full of natural minty and chocolate flavour. It’s the real deal, flavoured with actual mint leaves and cacao and it tastes so good, you’ll feel like you’re cheating. It’s also a great foundation for healthy additions like chia or flax seeds, greens powders, bee pollen… anything superfoody you might fancy. This, my friends, is what healthy, super-satisfying indulgence is all about.

Enjoy, and you know, happy new year!
