Crunchy Pink Lady apples and sharp cheddar cheese team up with crispy bacon, buttery croissants and runny poached egg to create a fall-inspired breakfast sandwich that you’ll be happy to wake up to. Apple and cheddar… it’s a match made in heaven!
My kids are absolutely in love with Granny Smith apples. Seriously, they’re little fruit bats, and we are at the point at home where we can’t keep apples in stock (around 2kg a week is about right, when it comes to inventory depletion).
But Autumn has turned. And the last time I took Brandon (Mr 5) grocery shopping with me, he saw a huge stack of Pink Ladies, which were piled high, and quite frankly, killing it in their incredibly attractive, ‘take me home now’ glory. Suddenly his affair with apples went from an adoration of bright green, to a sweet array of pink, peach and yellow. Damn, they looked amazing and, it goes without saying, he absolutely had to have them.
“Mate, I am not sure you’re going to like these as much as the green ones”, I said.
“Don’t be silly Mum, I think they’ll be delicious”, he retorted.
Okay then. On this particular occasion, I swapped out my normal buy of shiny green Grannys, for a big fat bag of sexy gradient Pink Ladies. Everybody is happy, let’s head home.
You might be wondering what any of this has to do with the humble breakfast sandwich… but bear with me. One of my favourite parts of being a mum, is learning that my kids are fickle. Seriously, they are as capricious as they come. So perhaps it was inevitable, that despite demanding them, Bran wasn’t going to chow down on the Pink Ladies…. At least, not to the extent he would have done, had they been those bright green, semi-sour Grannys that he’s used to.
So here I sit, a few days later, trying to suss out what to do with these beautiful pieces of fruit. He and his older brother have proven they aren’t going to touch them, and I don’t handle ‘waste’ very well…. So what should we do?
Make a breakfast sandwich, I say!
So let’s talk about this breakfast sandwich. Who doesn’t love bacon, egg and cheese? Frankly, I took a look at the kitchen and realised my boys weren’t going to inhale the apples like I thought they would, so it was time to get creative.
This breakfast sandwich is pretty cool. Like, just to start off, there’s bacon. Straight up, you’re onto a winner. But then, we take a look at the fact that there’s a drizzly egg spilling everywhere…. kinda stock-standard.
But it’s the addition of the apple that really makes this breakfast sandwich great. Gala apples are in abundance at the moment, and they have the potential to turn a good dish into something flippin’ awesome. Add a buttery croissant, very little kitchen time and this is the. Best. Breakfast. Ever.
So, this dish is super easy and really delicious. I shouldn’t get this excited about a drizzly egg, but , just look at it! It’s the best when it comes to breakfast sandwich hangover food. I don’t doubt for a second that you have all the ingredients to make this magic happen, already in your house…. It’s meant to be.

Apple and Cheddar Breakfast Sandwich
Crunchy Pink Lady apples and sharp cheddar cheese team up with crispy bacon, buttery croissants and runny poached egg to create a fall-inspired breakfast sandwich that you'll be happy to wake up to. Apple and cheddar... it's a match made in heaven!
- 4 croissants, cut lengthwise
- 8 slices cheddar cheese
- 8 slices short cut bacon
- 1 avocado, sliced
- 2 Pink Lady apples, sliced *see note
- 4 eggs, poached *see note
- salt and pepper (to taste)
- fresh chives (for garnish)
Preheat oven to 180C.
Split croissants and place in oven to warm through, approximately 5 minutes.
Layer warmed croissants with 2 slices cheese each, return to oven and allow cheese to melt.
Meanwhile cook bacon in a frypan to your liking.
At the same time, poach your eggs, using your preferred method.
Remove croissants from oven and top the base halves with avocado and apple slices. Sprinkle lightly with salt and pepper to taste.
Top with prepared bacon and poached egg, then garnish with fresh chives.
Serve with the top half of the split croissants to the side, break into your runny egg and enjoy!
You can use any variety of apple you like - anything will work! Cook your eggs to your own liking... I always poach mine soft.
